Does the GS 6k and 12k inverter have the ability for the user to throttle back the wattage of the inverter. Example say you own a 6k or 12k inverter and have a small battery bank. Can the user set the wattage output lower to what the inverter can deliver. Say for half the wattage. This way in future when the battery bank is increased the user can change the setting back to default.

Sorta there already, but not currently as an easy to access feature (though there's really no reason why it can't be).  If you unlock the software warranty, you can access the System Setup screen and change the inverter wattage there.

Doesn't seem particularly useful of a feature though...what's the inverter to do, shut off sooner?  Or maybe the user should just not plug as much stuff into it?

Something sort of like this will be available in the reverse form for RV users...current limit on AC input.

Main reason would for a smaller battery bank. So if you void the warrantee you have access to the max wattage so the unit would turn off. Is this correct even if you lower the settings.

If you reduce the settings, yes, the inverter will shut down at a lower wattage.  And if you increase the settings beyond the "listed" max (i.e. 6kw), it'll run a higher load until it overheats and shuts down.
